This collection consists of 30 good quality 8 x 10 sepia tone photographs documenting construction work on the Keokuk Power Dam at Keokuk, Iowa. Central Engineering Company of Davenport, Iowa was contracted for construction of this hydroelectric dam and lock system.

Steam sausage stuffer suspended from ceiling. Note wooden stuffing table – tin top. Most containers used were wooden barrels and wooden tubs. Smoke house racks were wood. Smoke stocks were taken off racks by hand and hung on brackets in smoke house.

Dry salt cellar in first concrete building erected in 1912. Note tin pans under refrigerating piping over aisle.
7. Open air hog chill room – No insulation since hogs were chilled by opening windows.

Note – various sized curing tubs. All cures of ham and bacon were sweet pickle except meat to go south. Meat for southern trade was “Dry Salt.” Very heavily salted, loaded on packet steamers for shipping. Not refrigerated boats. In south, Dry Salt was stored in open on boat docks until delivered to plantations.
Curing Vats – At one time in 1915 there were vats from 4 different local packers who had gone out of business. Also, individual vats were built to fit individual areas – There was no standard spacing of columns.

13. Note – Only equipment on cutting floor was belly roller in background.
14. Note: Shipping Room cooler – All wood racks. This was first concrete construction about 1912. Overhead pipe above deck for circulation. Note frost on bottom deck. As of this date, whole pork shoulders were sold to butcher shops and cut up in the shop.
15. Note: Sausage and ham cooking vats originally all wood. Jacketed kettle in foreground added about 1910.

Note: Wrapped hams hanging from ceiling were cured – smoked – wrapped in absorbent paper – again wrapped in parchment and sewed in cotton bags – then dipped in glue and kept without refrigeration for months.

This collection consists of four 4 x 5 copy negatives, four 4×5 copy prints and one 8 x 10 copy print (a duplicate of one of the 4 x 5s) made from photographs in the possession of donor Elaine Kresse. These images are associated with artifacts in this accession.
Donor’s husband is Sam Kresse. George Ochsner is Sam’s uncle. Chester Kresse is Sam’s father. Chet worked in the garage in Muscatine when Sam was born.
